sudacode 801cdcafca fix(docs): update Plausible proxy hostname to worker.sudacode.com 
- Change `PLAUSIBLE_PROXY_HOSTNAME` from `worker.subminer.moe` to `worker.sudacode.com`
- Update test assertion to match new hostname
